Sharon's Birthday Dinner & Brownies

12th Nov marked Sharon's birthday. This year I thought of a surprise celebration for her. She was supposed to be on leave that day but Leon, her fiance, called to inform me that her leave was cancelled. Btw, I managed to get some help from Leon to transport Sharon over for the surprise dinner at my humble home.

He picked her up after work,blind folded as she was not suppose to know where he will be driving her to, while we (mom and myself) were busy preparing dinner at home. To cut things short, here are some pictures of the night to remmember by.

We hope she enjoyed her surprised birthday celebration.

Here are the simple recipes for:

Homemade Mashed Potato

Ingredients (serving - 5)

4 large potatoes
2 tbsp of butter
3 tbsp of condensed milk (optional - omit this if you prefer it salty. This is for the sweet version)
pinch of salt
pinch of pepper

Method

1. Peel off potatoes skin and steamed for 30 mins
2. Mash potatoes
3. Add all ingredients and continue to mash
4. Best serve warm


Homemade Croutons

Ingredients

2 slices of bread or baguette ( cut into small pieces)
extra virgin olive oil
dried herbs (optional)

Method

1. Prepare aluminium foil on a flat pan
2. Scatter the bread pieces on the prepared pan
3. Pour extra virgin olive oil evenly over the bread
4. Spread herbs over and mix well
5. Toast in a preheated oven of 170C for 15 mins
6. Once cooled, pour over ready prepared salad as topping

Afternoon Snack of Wrap

I was watching tv with Lucas sleeping on my chest (his favourite sleeping position). Suddenly I remembered I have 3 pieces of breakfast ham in my fridge for almost a week. Gosh!!! I am not sure if they can still be eaten. Hmmm... they felt a little sticky but I placed them under running water and rubbed a little. Tah dahhhh.... all cleaned and edible now. Hahaha.... I dont like to waste food ya see... unless they are really badly rotten or sour.. but I tasted the ham and they were fine. So I stir fried them with cut pieces of pineapple and wrapped them up.

Here are the easy steps to making Ham & Pineapple wrap.

Ingredients:

1 pack of wrap (can get from Carrefour & NTUC)
1 small can of pineapple (omit the syrup)
3-4 pieces of honey baked ham or breakfast ham
1 pack of shredded mozzarella cheese
2 tbsp of mayonnaise

Methods:

1. Cut pineapples and ham into small pieces
2. Heat pan and stir fried ham and pineapples till sightly brown


3. Place a wrap on a flat plate

4. Spread a thin layer of mayonnaise


5. Scoop a reasonable amount of pineapple and ham to one half of the wrap


6. Spread shredded mozzarella cheese on top of the ham and pineapple


7. Cover the other half and pan fried without oil. 1 to 2 minutes on each side till slight brown. Its for the cheese inside the wrap to melt.

8. Cut into half and serve while still hot and crispy

Butter Cake with Raisins

My dear brother has requested for a butter cake with raisin few days ago. Couldn't resist his cravings, so I dragged my big a** out of sofa on a lazy Friday noon while he and hubby were out to Leng Kee road to check out some cars.

This is an easy to make recipe.



Ingredients:
250g unsalted butter, at room temperature
200g plain flour/ all purpose flour
1 tsp double action baking powder (I use just basic baking powder)
200g castor sugar
4 eggs
½ tsp salt
4 tbsp fresh milk (I use 1 small cup of plain yogurt, full fat for full flavour)
1 tsp vanilla essence

Methods:

  1. Preheat oven to 180°C. (Best to preheat for 15 mins)
  2. Lightly grease a 22cm square baking tin with melted butter or oil and line it with grease-proof paper.
  3. Mix plain flour and baking powder together and sieve. Add in salt and mix well. Set aside.
  4. Use low speed to mix butter and sugar until well combined. Change to medium speed and beat until light and pale in yellow. (Note: Sugar has not dissolved yet).
  5. Add in the first egg. Beat well after each addition of egg until creamy.
  6. Scrape down the sides for even mixing.
  7. Add in vanilla essence and mix well.
  8. Divide flour into three portions, use lowest speed to mix in flour. Scrape down sides for even mixing.
  9. Finally, add milk (or yogurt) bit by bit.
  10. Pour the mixture into the greased baking tin. Shake it lightly to distribute cake mixture evenly.
  11. Bake for 45 minutes or until golden brown and cooked. If a toothpick/skewer comes out clean, it is done.
  12. Remove it from the oven and leave the cake in the tin to cool on the wire rack for another 5 minutes.
  13. Best to serve warm.
Some tips to share:
  1. When adding egg, use low speed to mix until well combined and then change to medium speed.
  2. If the eggs are added to the sugar-fat mixture too quickly, it will cause the mixture to curdle (or separate). If this happens, add 1-2 tbsp of plain flour and mix well.
  3. Break egg into a bowl before adding into the cake mixture. This is to prevent any spoil egg from ruining the whole cake mixture.
  4. The baking time and oven temperatures vary depending on the types of oven, so use your own judgment to experiment.

Brother and Tarte au Chocolat

My brother is in town and usually we tends to eat a lot whenever he visits. Not that he really came for a visit but he is here for work and spending the rest of the weekend here since tomorrow is a public holiday. (Diwali Day)

When he arrived on Monday evening, he was asking if I am baking my signature brownies for him. As I just had a wrist surgery last Thursday and still in the recovery mode, I thought its best to let my wrist rest. But inside y heart, I wanted to make something for him since he hardly visits. At the end, I gave up the idea of resting the wrist, so I decided to make something different instead of the usual brownies. I am trying out this new recipe, Tarte au Chocolat. Tried one good piece at Han' cafe and still can't seems to get over the thought of making one myself. So, I started googling to look for a similar recipe and found this one, but I am not someone who follows recipe exactly, I love to modify according to taste and whats available in my kitchen.

BIG MISTAKE!!! After I took out the tarte from the oven, did I realised, I didn't add sugar to the chocolate feeling!!! OH No!!!! Must be really bitter to taste. Yeah... I pinched the side a little and tested, proven. BITTER!!! Arghhh... I thought... damn... how would my brother eat those when he isn't someone who would appreciate really bitter chocolate??? Sighhh... I can't redo ( too wasted as I used 2 blocks of Hershey's good baking cocoa.) So I thought of making chocolate ganache and make it sweeter to compensate the bitterness of the tarte. Again, I modified the ganache ingredients, and not bad I would say as it was the ganache that saves the day.

I poured thhe ganache on the tarte and refrigerated for more than an hour but it just won't go harden. Still melty (remember I modified the ingredients???).. That explains the change of texture too. After dinner, we took out the tarte from the fridge and cut the into pieces.

Jac, my BFF, was here for dinner. So both of us were the guinea pig for the tarte and she was very encouraging, thought it was bitter to taste but she, loyally ate the bitter piece. Btw, she is my loyal fan of brownies.

Before you try out the recipe which I will add at the end of this post, the recipe calls for pastry as base but due to my wrist, I can't do the pastry and also can't seems to find a ready made in NTUC. Hence, I replaced with the base of my cheesecake, yes.... consist of sweet biscuits (I used digestive biscuits) and melted butter.





Here are the recipes:

For the pastry:
½ cup butter, cut in small pieces
1 ¼ cups flour
¼ tsp salt
1/3 cup sugar
1 large egg, slightly beaten
1 tsp vanilla extract

Sift together flour sugar and salt. Cut in butter with a pastry blender or two knives, leaving small peas sized pieces of butter throughout the mixture. Add egg and vanilla and mix together only enough to make a dough form. Wrap the dough in plastic wrap and let it rest in the refrigerator for a half hour before rolling out

You can make your dough the previous day but make sure you take it out of the fridge for 10 minutes to warm slightly before rolling out.

Roll the dough into a 12 inch round and place in the bottom of a 10 inch tarte pan or pie plate. You will need to blind bake this crust for 10 minutes at 350 degrees F before adding the filling. Blind baking is essential so that the bottom crust will not get soggy.

To blind bake a crust, simply place a piece of parchment paper or aluminum foil over the dough and cover the bottom of the pie plate with baking weights. (Marbles, dry beans, peas, rice or barley work just as well as anything else.)

For the chocolate filling:

7 ounces (by weight) dark chocolate, chopped into small pieces

7 ounces whipping cream
3 ounces milk
1 tsp vanilla
1 large beaten egg

1/2 cup of sugar


Bring the cream and milk just to boiling and pour the hot liquid over the chopped chocolate. Let stand for 5 minutes and whisk together until smooth. Cool for about 10 minutes before whisking in the beaten egg and vanilla.
Pour into the blind baked shell and bake at 350 degrees for about 20 minutes. The center can still be a little wobbly at this point. The surface should still be shiny. Cool thoroughly before cutting and serving. Garnish with whipped cream and chocolate shavings if desired.

a Glimpse of my new love, darling Lucas





Am Back!!!

Hello there... after almost a year of hiatus, I am finally back. Hopefully I wont go hiatus for too long again.

I was away for the past 10 months as I was rather lazy to even sit in front of my PC, being preggy and slow and getting tired all the time. Though I was lucky that I had no morning sicness nor cravings, but I get tired very easily. May be its due to age thats making me so tired. Hehehe...yeah...have to admit I am getting old......

Now that my little darling Lucas was born, I have been busy nursing, and still manage to find the little time left to bake some brownies and cakes. Thanks to mommy dearest that she came here to help baby sit my darling Lucas thus I can spare that little time for my favourite pass time. But not for long as I just had a wrist surgery last Thurs (28.10.10) and doctor said it would take at least 6 weeks for full recovery. So in another words, yes... I am in the recuperating mode, though I am having the baking mode ON some how but I just have to be good to my newly repaired wrist for now. I was suffering this pain on my wrist since April and in May, I had a steroid injection (locally) due to my pregnancy and there wasnt much the doctor can do. 3 months later after baby Lucas was born, the pain came back and I endured the pain for another 2 months, with acupunture (total of 8 sessions from 2 different TCM) and a course of Arcoxia (anti-inflammatory drugs). No improvement, so after spoken to Jac my BFF, who suggested I see a Hand Wrist specialist, I went to google the surgeon and made appt to see him on Tues, which he suggested surgery as my last option. 2 days later all done at East Shore Hospital (day surgery).

Hmmm... having said that, I think my typing quota is up and its time to rest my wrist. Shall continue to write more as and when my time permits.
